Fun Friday - Veronica/Pampered Chef and New College Small Group!

Veronica has decided she wants to be a pastry chef and has already signed up for several new and fun classes that I would love to take. But, it's also fun having her at home to cook once in awhile. One of my favorite things to make are these churros from Pampered Chef. She asked me to take a photo for her Pampered Chef website (click here) which she is doing to earn some extra dough (pun intended). Another goal for her is to go to France to study at Le Cordon Bleu!! Yes, she saw the movie Julie and Julia. It's one of our favorites!

Pampered Chef Churros

All-purpose flour for dusting
1/2  pkg. (17.3 oz) frozen puff pastry sheets (1 sheet), thawed
2     tbsp butter, melted, divided
4    tbsp Sweet Cinnamon Sprinkle, divided (or you may use cinnamon sugar)

  1. Preheat oven to 400 degrees F. Line Cookie Sheet with parchment paper. Lightly sprinkle  flat side of cutting board with flour. Unfold pastry onto cutting board; brush with 1 tbsp of the butter. Sprinkle 2 tbsp of the sprinkle over pastry; lightly press into pastry using Baker's Roller®. Place Cookie Sheet, parchment-side down, over pastry. Invert both cookie sheet and cutting board; remove cutting board. Brush pastry with remaining butter; sprinkle with remaining sprinkle, lightly pressing into pastry.
  2. Cut pastry into four squares using Pizza Cutter. Cut each square into four strips; twist strips twice. Bake 12-14 minutes or until golden brown. Slide parchment and churrros onto Stackable Cooling Rack; cool churros 5 minutes.
The Pampered Chef recipe actually uses a dip that you can find in the Spring/Summer 2010 Season's Best Recipe Collection, but we prefer churros dipped in chocolate, so just use your favorite chocolate sauce!

The chocolate (just a simple ganache) is in the pitcher. Tray and pitcher from Evangeline in Frederick, Maryland, a store you must go to if you are ever in Frederick, Maryland!

One of the reasons Veronica made the churros this time was to take to the new college small group kick-off! The Cosgrove family asked us to join them in starting the group since our college students are finding they are either still in town after their friends go out of town for school, or too old for the youth groups they've attended for years. The Campbell's offered to host the kick-off and Zac's mom made a delicious Mexican dinner for us! Here are all the young adults that came last night. If you want to join us, message me or send an email! We are an open group and so far we represent at least 3 different Christian churches. Maybe I'll get to snap a pic of Curtis the next time without him hiding his face.
