Pumpkin Bread on the First Day of Fall!

Today is the first day of fall and my son, Jeremy's, birthday. When he was in kindergarten, his teacher sent home a recipe for pumpkin bread. I've been making it off and on ever since, but always in the fall. We've sold a few houses with the smell of pumpkin bread! Scroll down for the recipe if you are interested.


Pumpkin Bread

1 cup canola oil
2 1/2 cups sugar
3 eggs
1 16 oz. can of pumpkin

Preheat oven to 350 degrees. Spray 6 small loaf pans with vegetable cooking spray. Mix the above ingredients together in mixing bowl. Add the following to the above mixture.

3 cups flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground cloves

Mix for about 2 minutes. Pour pumpkin mixture into small loaf pans. Bake for 40 minutes. Cool and try not to eat it all in one day.
